Tonight's Menu and The Joy of Bacon

I'm trying to not cook the same 4-5 meals all the time. I ordered a new cookbook to help, but honestly I really just love reading cookbooks and usually only end up making 2 recipes from the book. I'm mostly okay with that, but I'm feeling a need to expand our eating habits.

Tonight for dinner I was in the mood for something warm, but nothing time consuming. Randomly I decided that I wanted oatmeal. I do love breakfast for any meal and I've always liked oatmeal well enough, but I'm chalking this one up to pregnancy! Anyway, it ended up turning out really well. I made a couple of cups of oatmeal in the microwave. I always use old fashioned oats, not quick oats, because I think the texture is better. I put out a whole spread of mix-ins: dried cranberries, raisins, cinnamon, nutmeg, brown sugar, honey, walnuts, and almonds. It was awesome! Glenn and I both doctored up our individual bowls and chowed right on down. Glenn even had seconds, which is rare! For those of you that don't know, Glenn can be a little picky sometimes. I definately have to remember this idea.

We also had turkey bacon. I actually have come to enjoy turkey bacon, which I never really thought was possible. I'm a big fan of bacon in general as long as it's nice and crispy, with maybe a little chewiness left. Nothing, not even the smell of coffee, can propell me out of bed like the smell of bacon. The issue of course is that I might have a tiny little self control problem when it comes to eating bacon. I have started making turkey bacon in the hopes that since it has half the fat I can eat just as much and only feel half as guilty. So far it's working out pretty well. I'm a proponent of making bacon in the oven on a baking rack - the bacon gets crisp without cooking so much in it's own fat and it stays flat which I like for sandwiches and because it looks like more on the plate. Turkey bacon seems to cook well this way. Microwaving turkey bacon is not a good idea. Less fat = dried up nasty bacon in this case. If you haven't tried the oven method, do it. You can also make a whole lot more bacon at once.

Just wanted to let you know I tried baking my bacon for the first time tonight. Way better method! Seems like every time I pan fry it, the kitchen ends up filled with smoke. Not so with the oven. :)

The other awesome part is that you don't end up with grease all over the stove and everything. Glad to make another convert!
