My Knock Off Creamy Chicken and Gnocchi
Well, this is a guess since I didn't write anything down. I put a package of frozen boneless skinless chicken thighs into the crock pot with a cup of broth on low for 4 hours - that took care of the chicken.
I mixed a box of broth with chopped carrots, onion powder, garlic, and a bay leaf and simmered it until the carrots were soft. Remove bay leaf. Add gnocchoi. Once it floats it's done. Make a slurry of about 2 tbsp of cornstarch and 3/4 cup heavy cream. Pour in and bring back to a simmer. Then add the chopped chicken and fresh baby spinach.
